A goat herder named Kaldi discovers a strange and exotic berry while tending to his herd. Believing the berries were from the devil, he threw them into a fire. Fortunately, the roasted berries released a delightful aroma and were quickly rescued from destruction by the monks who were eager to discover this divine olive that would expel their drowsiness during prayer. Thus was born coffee, the world’s most popular wake-up call and a drink that, in addition to stimulating the brain, has since helped build empires and establish new ones, cross religious boundaries, and create a society of corporations, police forces, banks, insurance companies, stock markets, and global trade.

Located on Herman Avenue next to Grace United Methodist Church, the former Quiet Monk Coffee has been transformed into a cozy home of hardwood floors, stained glass, a metal roasting machine, lush green plants, statement pillows, and pithy coffee-quote plaques for once-a-week private tastings that become upper-level courses in all things coffee. The tastings are free and open to the public, but the space also serves as a coffee bar, with orders taken over the counter for pick-up and delivery.

The company has always been a family affair, with Willits juggling his full-time job at a web firm and home duties with his wife, LaShae, and two kids, ages 12 and 8. He also volunteers for the Polaris Project, a national nonprofit that operates a human trafficking hotline.
